HUMMUS
Makes about 2 cups
Ingredients:
15 ounce can chickpeas (drained, liquid reserved)
2 tablespoon tahini
2 garlic cloves (add less or more according to taste)
sea salt and black pepper to taste
red pepper flakes or hot paprika (optional)
Juice of 2 lemons
Directions:
1) Place chickpeas, tahini, garlic, salt, pepper and red pepper (or paprika) in blender and begin to blend on pulse mode.
2) Add lemon juice and reserved liquid (about ¼ cup of liquid) from chickpeas slowly until smooth paste.
Refrigerate in airtight container up to 5 days. For a flavor variation you could also add a tablespoon of basil, curry powder in place of the hot pepper or a handful of washed, chopped basil, mint, or parsley. Experiment!
